Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Wine at an Izakaya? A Challenge to Step Beyond 'The Usual Drink'

'When you think of a drink at an izakaya, it's beer first! Then sake or shochu is the standard, right?' Many of you might feel this way. Indeed, in Japanese izakaya culture, beer and sake are indispensable and pair wonderfully with the food. But did you know that there's a world of undiscovered gastronomic potential sleeping just beyond?

Common Perceptions and Challenges of Wine at an Izakaya

Wine might bring to mind a formal experience at a French or Italian restaurant. At an izakaya, the wine list might be small, or you might not know which wine to choose. Questions and anxieties like, 'Which wine goes with this dish?' or 'Does wine even go with izakaya food?' often lead people to stick with familiar drinks.

  • Limited Selection: Some izakayas have a limited variety of wines, which can make choosing less enjoyable.
  • Pairing Anxiety: It can be hard to imagine how Japanese food and wine go together, leading to a fear of making a mistake.
  • Intimidation Factor: Some may feel that you need to be knowledgeable about wine to order it.

This tendency might be particularly noticeable in the Minami-Kusatsu Izakaya scene. However, at Noji Izakaya, we are breaking down these stereotypes and proposing a new style where Japanese and wine cultures merge. We have devised ways for our customers to discover food and wine combinations more casually and joyfully.

The Potential of Wine Pairing Offered by Noji Izakaya

The dishes Noji Izakaya proudly serves are characterized by their delicate yet powerful flavors that make the most of the ingredients. For example, our aromatic 'Straw-Grilled Bonito Direct from Kochi,' the dazzling 'Assorted Sashimi' with its seasonal seafood, and our melt-in-your-mouth 'Omi Beef' dishes. These specialties actually exhibit a surprisingly wonderful compatibility with a wide variety of wines.

To help our customers take that step beyond 'the usual drink' and embark on a new culinary adventure, we have expanded our wine lineup. Our staff is also trained to recommend the perfect bottle to match your preferences and your meal. We truly hope you will experience the delight that wine pairing can bring, whether it's for a drinking party, a banquet, or business entertainment near Minami-Kusatsu Station.

In the next section, we will fully convey the appeal of these pairings through specific examples of our dishes and wines. Please look forward to it.

The Noji Izakaya Style! Best Pairings for Exquisite Dishes and Wine

The exquisite dishes that are the pride of Noji Izakaya each have their own unique character. What draws out their charm to the fullest and evokes an even deeper sense of wonder is the magic of pairing them with wine. Here, we introduce specific pairing examples for our signature menu items.

1. Overwhelming Aroma! Straw-Grilled Bonito Direct from Kochi and Wine

Our 'Straw-Grilled Bonito Direct from Kochi' is practically synonymous with our restaurant. By searing it over a powerful straw-fueled flame, we lock in the bonito's umami while imparting a uniquely fragrant, smoky aroma. This masterpiece, with its savory aroma and moist texture, pairs wonderfully with several types of wine.

  • Rosé Wine: The savory, smoky flavor of the straw-grilling and the berry-like fruitiness and moderate acidity of a rosé wine harmonize beautifully. It's a pairing where the aromas expand in your mouth, mutually enhancing each other's character. Importantly, it doesn't clash with the bonito's condiments (garlic, Japanese ginger, green onions), maintaining an overall balance.
  • Light-Bodied Red Wine: A red wine with gentle tannins and rich fruitiness, like a Pinot Noir, won't overwhelm the bonito's umami but will instead add depth. It also balances well with the fat of the seared fish, cleansing the palate and inviting the next bite.
  • Chardonnay (Unoaked): For those who prefer a very delicate white wine, a crisp, unoaked Chardonnay is also an excellent choice. It allows the natural umami of the bonito to shine through while the wine's minerality refreshes the palate.

Our straw-grilled dishes in Minami-Kusatsu truly expand the possibilities of wine pairing. Please be sure to try various combinations.

2. Colorful Seasonal Assorted Sashimi and Wine

The best way to savor the essence of 'Minami-Kusatsu Seafood' is with our 'Assorted Sashimi,' featuring fresh fish procured that very morning. From the delicate sweetness of white fish to the rich umami of red fish and the firm texture of shellfish, you can enjoy the diverse blessings of the sea on a single plate.

  • Dry White Wine: To complement the delicate flavors of seafood, a dry white wine like a Sauvignon Blanc with its refreshing citrus notes or a mineral-rich Chablis is ideal. It cuts through the fish's natural oils and cleanses the palate.
  • Sparkling Wine: Especially when enjoying sashimi as an appetizer, a sparkling wine with its fine bubbles and crisp acidity is highly recommended. It embraces the flavors of various seafood and adds a touch of brilliance.
  • Daring to Choose Wine Over Sake: You might be surprised how well wine complements Japanese condiments like soy sauce and wasabi. Mineral-forward white wines, in particular, pair beautifully with the saltiness of soy sauce.

Our sashimi platter is truly a treasure chest of the sea. Wine makes each piece of seafood shine even brighter.

3. The Pride of Shiga, Omi Beef Dishes and Wine

Dishes made with 'Omi Beef,' the brand of beef that is the pride of Shiga, are another hidden specialty of Noji Izakaya. Known for its melt-in-your-mouth texture and the sweetness of its high-quality fat, Omi beef's charm can be maximized through wine pairing.

  • Full-Bodied Red Wine: For dishes that concentrate the meat's umami, like Omi beef steak or seared preparations, a full-bodied red wine with firm tannins, such as a Cabernet Sauvignon or Syrah, is an outstanding match. The fat from the meat and the tannins from the wine meld in the mouth, creating a deep, rich umami.
  • Medium-Bodied Red Wine: For lighter preparations like Omi beef tataki or yukhoe, a medium-bodied red wine like a Merlot or Zinfandel is recommended. The wine's fruitiness adds a vibrant touch without overpowering the meat's delicate flavor.
  • Sparkling Wine: It may be surprising, but for fatty cuts of Omi beef, a dry sparkling wine like Champagne is a wonderful option. The bubbles cleanse the palate of fat, allowing the meat's umami to stand out.

For business entertainment in Minami-Kusatsu, this pairing of Omi beef and wine is sure to deeply impress your guests and spark conversation.

4. Hidden Gems Unique to Noji Izakaya and Wine

Beyond the above, Noji Izakaya has many other gems, from dishes made with seasonal vegetables to creative cuisine, that we encourage you to enjoy with wine. For example, seasonal vegetable tempura pairs well with a light sparkling wine or a crisp white. Miso-based dishes, surprisingly, can go well with rosé or a slightly sweet white wine.

The most important thing is to experiment freely and joyfully, without being bound by preconceptions of 'how it should be.' If you're ever unsure, please don't hesitate to ask our staff. We will be happy to recommend the perfect wine for your tastes and mood.

By adding the new option of wine to the usual dishes at a drinking party or banquet near Minami-Kusatsu Station, the dining experience becomes exponentially richer. We invite you to enjoy this new discovery at Noji Izakaya.

Practical Steps: A Guide to Enjoying Wine Pairing at Noji Izakaya

Now that you understand the wonderful compatibility between Noji Izakaya's dishes and wine, let's introduce the concrete steps to fully enjoy wine pairing at our restaurant.

Step 1: When You Arrive, Let Us Know You're Interested in Wine

Once you've arrived and are seated, simply tell our staff, 'I'm interested in wine pairing.' Our team has a wealth of knowledge about combining food and wine. We will recommend the best wine based on your preferences, your mood for the day, and the dishes you plan to eat.

  • Tips for Talking to Staff:
    1. Ask, 'What's the recommended seafood today?' and consult on a wine to match.
    2. Ask specifically, 'What kind of wine goes with the Omi beef dishes?'
    3. Tell us your preference, for example, 'I prefer red wine.'
    4. Feel free to let us know your budget so we can suggest the most suitable options.

You're sure to make new discoveries by talking with our staff about the secrets of pairing and the character of the wines—things you might not grasp just by looking at the wine list.

Step 2: Start Casually with Wine by the Glass

If you feel that ordering a whole bottle is a bit of a hurdle, don't worry. Noji Izakaya offers several types of wine by the glass. We recommend starting by trying out different pairings with various dishes.

For example, you can enjoy the change in flavors by ordering different glasses of wine for each dish—a rosé for the 'Straw-Grilled Bonito Direct from Kochi' and a dry white for the 'Assorted Sashimi.' This is the best way to easily experience the fun of wine pairing.

Step 3: How to Utilize Wine Pairing for Course Meals and Banquets

For meals with multiple people, such as banquets or business dinners in Minami-Kusatsu, combining a course meal with wine pairings is highly recommended. If you let us know you'd like a wine pairing when you book in advance, we can propose and prepare the optimal wines to match the structure of your meal.

  • Helpful Tips for Banquets and Business Dinners:
    • Advance Consultation: Letting us know your guests' preferences, allergies, and your budget in advance allows for a smoother experience.
    • Private Rooms: For business entertainment in Minami-Kusatsu, we recommend using our private rooms for a relaxed atmosphere. You can enjoy conversation, food, and wine pairing without worrying about your surroundings.
    • Private Bookings Available: We can also accommodate large-scale banquets for 'private bookings of up to 45 people in Minami-Kusatsu.' A wine pairing for a large group can create a special sense of unity.

Our dishes create a wonderful harmony not only with beer and sake but also with wine. As we are a smoking-allowed izakaya in Minami-Kusatsu, it's also possible to enjoy a more sophisticated experience, such as pairing a fine red wine with a cigar during a relaxing after-dinner moment. As a hideaway for adults, we cater to a wide range of needs.

Step 4: Enjoy the 'Why' of the Pairing

A true pleasure of wine pairing is exploring your palate while asking, 'Why does this wine go so well with this dish?' For example, try to savor the chemical reaction with all your senses: the feeling of the smoky aroma of the straw-grilling mingling with the berry notes of a rosé in your mouth, or the sensation of a full-bodied red wine's tannins cutting through the sweetness of the Omi beef's fat.

At Noji Izakaya, we want to do more than just serve delicious food; we want to offer our customers new culinary excitement and discoveries. Please use these practical steps as a guide to enjoying the sublime harmony woven by our dishes and wines to your heart's content.
