Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Enhancing Your Minami-Kusatsu Entertainment with the Bounty of the Season: Our Commitment to Select Ingredients

The foundation of our cuisine is, above all, our dedication to seasonal ingredients. We carefully select the finest materials at their peak each season and prepare them in a way that maximizes their natural flavor. In the blessed location of Minami-Kusatsu, we partner with producers across the country to source the best ingredients daily.

Fresh Fish Reflecting the Seasons: Our Passion for the Morning's Catch

The appeal of Minami-Kusatsu seafood lies in its freshness and rich variety. Every morning, our skilled connoisseurs visit the market to handpick the best seafood of the day. We identify the peak season for different fish, which varies with the catch, and sometimes visit the sources directly to meet with the producers.

  • Today's Fresh Fish: Enjoy the pure, unadulterated flavor of the day's freshest catch with our sashimi and nigiri. For example, spring brings cherry sea bream, summer offers pike conger, autumn features returning bonito, and winter stars tiger pufferfish, bringing the ocean's seasonal bounty to your table.
  • The Expert's Eye: We spare no time or effort in assessing the firmness, color, and fat content of the fish to ensure it is served to you in its most delicious state.
  • Diverse Cooking Methods: While our ultra-fresh seafood is perfect for sashimi and nigiri, you can also savor the essence of Minami-Kusatsu seafood in various forms, including grilled, simmered, and fried dishes that concentrate the ingredients' umami.

The Rich Bounty of Local Shiga: Our Passion for Vegetables and Meat

We are also proud of the vegetables and brand-name meats nurtured by Shiga Prefecture's rich natural environment. Freshly picked vegetables delivered from local contract farmers are characterized by their robust flavor. Furthermore, select meats like Omi beef add a touch of luxury to your entertainment with their melt-in-your-mouth texture and deep flavor.

  • Promoting Local Production for Local Consumption: By collaborating with local farmers and prioritizing seasonal vegetables, we offer dishes that make the most of the region's bounty. We use simple cooking methods to enhance the natural sweetness and aroma of the vegetables.
  • Specially Selected Meat: For meat dishes, which can be the centerpiece of your event, we are uncompromising about quality. We serve brand-name meats like A5-rank Omi beef, known for its fine texture and beautiful marbling, prepared in the most delicious way. We offer dishes that stimulate the senses, such as charcoal-grilling to a fragrant finish.
  • Peace of Mind from Knowing the Producers: To ensure you can enjoy your meal with confidence, we take a deep interest in the background of our ingredients. Knowing the passion and dedication of the producers elevates our cuisine to an even higher level.

A Dish That Resonates with the Heart: The Chef's Skill and Sincerity

Our carefully selected ingredients are transformed into a sublime dish through the chef's proven skill and heartfelt sincerity. Our chefs pour their years of cultivated experience into every plate, pursuing a flavor that will remain in our customers' memories.

Cooking Methods that Maximize Freshness

To bring out the best in our ingredients, we pay meticulous attention to our cooking methods. For instance, when serving fresh fish as sashimi, we vary the cutting style depending on the type of fish and the cut to optimize texture and flavor. With straw-grilling, we sear the fish instantly at high heat, creating a fragrant surface while keeping the inside perfectly moist.

  • Delicate Knife Skills: The beauty of our sashimi, as well as its melt-in-your-mouth texture, depends on the chef's delicate knife work.
  • The Art of Heating: Years of experience are condensed into perfecting the cooking of meat and fish. We lock in the umami of the ingredients and deliver them to you at their most delicious moment.
  • Highlighting the Ingredient's Character: Seasonings are merely supporting actors. Our top priority is to accentuate the flavor of the main ingredient, preparing it simply and carefully without unnecessary additions.

The Moving Experience Created by Meticulous Care

To ensure you fully enjoy your meal, we provide detailed consideration tailored to each customer's needs. This includes accommodating allergies and dislikes, timing the service of dishes to match the flow of your event, and suggesting beverages. We cherish this unseen sincerity.

  • Handling Allergies & Dislikes: Please inform us of any requirements when booking or upon arrival, and we will do our utmost to prepare dishes that meet your needs. Enjoy your client entertainment in Minami-Kusatsu without worry.
