Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Enjoy Assorted Sashimi with Peace of Mind: Allergy-Conscious Dining at Our Minami-Kusatsu Izakaya

Enjoying Our Assorted Sashimi with Peace of Mind at Our Minami-Kusatsu Izakaya

Escape the hustle and bustle of Minami-Kusatsu and enjoy delicious food and drinks in a relaxing atmosphere. At our izakaya, we welcome all our guests with heartfelt hospitality. Our assorted sashimi platter, featuring the freshest seafood of the day, is a particular favorite among our customers. However, just as important as the enjoyment of food—or perhaps even more so—is food safety. For guests with allergies, dining out can sometimes be a source of anxiety. We strongly believe that every customer should be able to enjoy their meal to the fullest. That's why we have implemented various measures to ensure that guests with allergies can safely savor our assorted sashimi and other dishes. In this article, we'll detail the specific efforts we make to provide you with peace of mind.

Addressing Your Concerns: Assorted Sashimi and Allergy Worries

Our assorted sashimi platter, a vibrant arrangement of fresh seafood, is a visually stunning dish that enriches any dining table. As a premier izakaya in Minami-Kusatsu, we take special pride in this offering, carefully selecting the best seasonal seafood. However, for customers with allergies, especially since seafood allergies can be diverse, knowing exactly what is included and how it is prepared is crucial. For instance, a guest with a shellfish allergy will need to know if shrimp or crab is included, while someone with a specific fish allergy will want to know the exact types of fish on the platter. Furthermore, even condiments like soy sauce or wasabi can, in rare cases, contain allergens. To ensure our guests can dine with confidence, it is essential to resolve these potential concerns beforehand. We believe that sincerely addressing our customers' need for information is the first step toward a safe and enjoyable dining experience.

  • The contents of the assorted sashimi platter may vary daily depending on our catch.
  • Due to the wide variety of seafood used, identifying specific allergens can be complex.
  • Attention must also be paid to potential allergens in seasonings and condiments.

Our Concrete Measures: Three Pillars of Reassurance

To ensure you can fully enjoy our assorted sashimi platter at our Minami-Kusatsu izakaya, we have established and practice the following three pillars of allergy accommodation.

1. Carefully Selected Fresh Fish and Thorough Information Disclosure

Every morning, we procure only the freshest seafood, handpicked at the market. We always track and record when and where each fish comes from. When a customer has questions about allergies, we can use this information to accurately convey the types of seafood being used.

  • Thorough Procurement Management: We constantly track the origin and type of seafood we use.
  • Detailed Information: Upon request, we will provide specific details about the contents of that day's assorted sashimi platter.
  • Encouraging Advance Consultation: If you inform us of your allergies when making a reservation, we can provide a smoother service.

Regardless of whether you have allergies, we want all our guests to enjoy their meal with peace of mind. To that end, we take our responsibility for each and every ingredient seriously and strive for complete transparency.

2. Attentive Consultation and Individualized Service

When you visit, please inform our staff of any allergies. They will listen carefully to understand which ingredients you are allergic to and the severity of your reaction. Based on this information, we will adjust your assorted sashimi platter accordingly or suggest alternative menu items.

  1. Please inform our staff about any allergies upon arrival or when making a reservation.
  2. We will ask for details about the type of allergen and the severity of your symptoms.
  3. We will either remove the relevant seafood from the assorted sashimi platter or suggest a suitable substitute.
  4. In the unlikely event we cannot accommodate your request, we will inform you in advance and recommend other safe and delicious menu options.

We place the utmost importance on communication with our customers. By carefully listening to your needs rather than making assumptions, we create an environment where you can dine with greater confidence. For business entertainment or special gatherings in Minami-Kusatsu, we take care to ensure that allergy concerns don't detract from your enjoyment of the meal.

3. Strict Management and Countermeasures in the Kitchen

In our kitchen, we strictly separate ingredients containing allergens from those that do not. When preparing allergy-friendly meals, we use dedicated utensils, cutting boards, and knives, or thoroughly wash and sanitize them beforehand to minimize the risk of cross-contamination.

  • Use of Dedicated Utensils: We use dedicated cooking utensils whenever possible for allergy-friendly preparations.
  • Strict Zoning: We clearly separate storage areas for potential allergens.
  • Staff Training: All staff members understand the importance of allergy accommodation and receive regular training on proper cooking procedures and service methods.

We promise that the assorted sashimi platter served to you is prepared in a safe environment. As a Minami-Kusatsu izakaya, we are dedicated to maintaining high standards of kitchen hygiene and staff awareness.

Creating Special Moments in Minami-Kusatsu: More Than Just Assorted Sashimi

As a versatile izakaya in Minami-Kusatsu, we offer more than just allergy-friendly dining. We cater to a wide range of customer needs and invite you to enjoy our unique dishes and atmosphere along with our assorted sashimi.

1. The Exquisite Aroma of Straw-Grilled Warayaki

Another of our signature dishes is Warayaki, a straw-grilling technique learned in its birthplace, Kochi. Our Straw-Grilled Bonito is particularly exceptional. By searing the fish over a roaring straw fire, we achieve a perfect texture—aromatic and crisp on the outside, moist and tender on the inside—while the unique, rich aroma of the straw enhances the fish's natural umami. The cooking process itself is a form of entertainment. It's a dish to be enjoyed with all five senses: sight, smell, and taste. We invite you to experience a different side of seafood's appeal in Minami-Kusatsu. We also provide allergy accommodations for our Warayaki; please let us know in advance about any concerns regarding the seafood or condiments used.

2. Private Rooms for a More Intimate Experience

We offer private rooms suitable for various occasions in Minami-Kusatsu, including business dinners, meals with loved ones, and family gatherings. These private spaces, where you can relax and converse without disturbance, are highly popular with our guests. We have rooms of various sizes to accommodate your group and purpose. Enjoy our fresh assorted sashimi platter and signature Warayaki to your heart's content in a serene atmosphere.

  • We have private rooms available for both small and large groups.
  • Ideal for business entertainment and family use.
  • Booking in advance ensures a smooth seating process.

3. Smoking-Permitted Seating and Private Bookings

To ensure a comfortable experience for our smoking customers, we have designated smoking-permitted seating areas. Those who wish to enjoy a cigarette with their drinks and meal can do so without hesitation. For larger gatherings like welcome/farewell parties, year-end parties, and New Year's celebrations, we offer a spacious area that can be privately booked for up to 45 people in Minami-Kusatsu. Booking the entire restaurant allows for a more unified party or event. When making a private booking, if any guests have allergies, we will consult with you in detail beforehand to provide individualized service.

  • We have smoking-permitted seats available for our smoking customers.
  • We can accommodate private bookings for up to 45 people, perfect for large parties.
  • Please feel free to contact us by phone to discuss private bookings.
