Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Assorted Sashimi and Allergy Considerations in Minami-Kusatsu

Here in Minami-Kusatsu, we welcome guests daily as an izakaya where you can fully savor the bounties of the sea. We cherish the blessings of each season and take joy in providing a heartwarming experience for both local residents and visitors from afar. Our specialty, the Assorted Sashimi Platter, is a particular point of pride, featuring a careful selection of the freshest seafood procured that very morning and artfully arranged by our skilled chefs. This dish, like a treasure chest from the sea, is a delight for both the eyes and the palate.

One bite will fill your mouth with the aroma of the seashore and the rich, melting flavor of the fish, pairing exceptionally well with sake and shochu. As a smoking-permitted izakaya in Minami-Kusatsu, we invite you to spend a relaxing time conversing while enjoying your meal. We also have private rooms available, allowing you to savor delicious food and drinks in a secluded, comfortable space.

However, we believe that ensuring the peace of mind of each and every customer is paramount to truly enjoying delicious food. We understand that guests with food allergies may feel anxious when choosing from the menu. That is why we are sincerely committed to accommodating allergies, aiming to provide an exceptional dining experience for all our customers without distinction.

Enjoying the Assorted Sashimi Platter with Peace of Mind: Our Approach to Allergen Accommodations

Our Assorted Sashimi Platter is an appealing dish that allows you to enjoy multiple types of seafood at once. By combining the best ingredients of the day—such as seasonal white fish, fatty red fish, and shellfish—we create a visually stunning plate. This diversity is its main attraction, offering the pleasure of tasting various ocean delicacies in one sitting. However, for this very reason, it can raise concerns for customers with allergies to specific seafood, who may wonder what it contains and if it's safe to eat. For the sake of our customers' smiles, we are strongly committed to alleviating this anxiety.

Allergenic ingredients are diverse, including crustaceans like shrimp and crab, mollusks such as squid and octopus, and blue-backed fish like mackerel and horse mackerel. Since the contents of our Assorted Sashimi Platter vary daily depending on the catch, we believe it's crucial to have a system in place to always provide our customers with the latest information. As an izakaya in Minami-Kusatsu, we sincerely hope that all our guests can enjoy our cuisine to the fullest.

Whether it's for business entertainment in Minami-Kusatsu or a private party for 45 guests, no one should have to miss out on certain dishes or hold back due to allergies. We consider it our mission to create the best possible experience for our customers' precious moments. By concretely explaining how we address potential concerns and what precautions we take, we strive to make your visit a more relaxed and secure one.

Carefully Selected Ingredients and Thorough Freshness Management for Our Assorted Sashimi Platter

We make absolutely no compromises when it comes to selecting the ingredients that form the foundation of our Assorted Sashimi Platter's deliciousness. Every morning, our experienced connoisseurs visit the market to rigorously inspect and procure the freshest seafood of the day. We meticulously check details such as the firmness of the flesh, the clarity of the eyes, and the condition of the scales. This ensures that we can always serve our customers seafood in its prime condition.

From the procurement stage, we track what kind of seafood is coming in and in what quantity, using this information to decide the contents of the platter. This is not only for taste but is also a crucial process for accurately answering customer inquiries about allergies. We believe that deep knowledge and management of each ingredient are essential for our customers to enjoy the Assorted Sashimi Platter with confidence.

  • Specially Selected Seasonal Ingredients: We use only the freshest seasonal seafood to deliver the best flavors of the moment. For example, you can experience the changing seasons through our platter with sea bream in spring, grunt in summer, saury in autumn, and yellowtail in winter.
  • Thorough Freshness Management: From the market to the kitchen and to your table, we maintain strict temperature control and swift processing at every step to preserve freshness. We pay meticulous attention to preparation techniques to avoid damaging the fish's cellular structure.
  • Daily Changing Menu: We compose the Assorted Sashimi Platter based on the best ingredients available each day, offering new discoveries and delights with every visit. This also allows us to keep our information for providing safe dining for all constantly up-to-date.

Our Concrete System for Food Allergen Management and Thorough Information Sharing

To ensure that our customers can safely enjoy our Assorted Sashimi Platter and other dishes, we have established a concrete system and pay meticulous attention to food allergen accommodations. We have procedures in place to accurately track and clearly communicate information about allergenic substances.

Thorough Management and Updating of Allergen Information

For all the dishes we serve, we meticulously manage the usage of ingredients containing major allergens (the 7 specified raw materials: egg, milk, wheat, buckwheat, peanut, shrimp, crab; and the 21 items equivalent to specified raw materials). This information is reviewed regularly, and we strive to keep it current, especially for our Assorted Sashimi Platter, which features seasonal ingredients that change with daily procurement. For instance, when a seasonal seafood item is added to the platter, we check in advance whether it could be a potential allergen and share this information with all staff.

Meticulous Care and Segregation in the Cooking Process

When a customer informs us of an allergy, that information is reliably shared with all staff, including the kitchen team. During preparation, we take thorough measures to prevent cross-contamination, such as using separate utensils, segregating workspaces, and changing gloves. For example, when preparing an Assorted Sashimi Platter without a specific type of seafood, we use a different cutting board and knife and are extremely careful during plating to ensure it doesn't come into contact with other ingredients. Similarly, for our Minami-Kusatsu Warayaki (straw-grilled) dishes, we take all possible precautions, such as using dedicated seasonings and equipment when an allergy accommodation is needed.

  • Advance Consultation Recommended: If you contact us before your visit, we can provide more detailed ingredient information and suggest alternatives, allowing for more personalized service.
  • Reconfirmation at Time of Order: When you place your order, we will reconfirm your allergy information to finalize the accommodation details and serving method, ensuring you can enjoy your meal without any misunderstanding or anxiety.
  • Information from Knowledgeable Staff: Our staff, who have specialized knowledge of our ingredients and cooking methods, will answer any questions about allergies in a specific and courteous manner. Please do not hesitate to ask if you have any concerns.

Open Communication with Customers Builds Trust and Safety

Allergy accommodation is not something that can be achieved through the efforts of the restaurant alone. We believe that open and courteous communication with our customers is the most crucial element in ensuring a safe and enjoyable dining experience. The specific information you provide is an important guide for us to offer the best possible service to each individual. Especially for large groups, such as for business entertainment in Minami-Kusatsu or a private party for 45, providing a summary of allergy information in advance allows for a smoother and more reliable response.

Request for Information Sharing at Booking and How to Do It

When making a reservation, please let us know if anyone in your party has a food allergy, the specific allergens, and, if possible, the severity of the symptoms. If you call, our staff will carefully listen to the details. If you book online, please enter the information in the notes section. This allows us to prepare the right ingredients and plan our cooking process before you arrive, enabling us to serve your meal smoothly without keeping you waiting. We ask organizers to kindly gather allergy information from all participants in advance.

Final Confirmation and Flexible Consultation Upon Arrival

After you arrive, our staff may reconfirm your allergy information when showing you to your seat or taking your order. We encourage you to voice any concerns you may have. We will do our best to accommodate your needs, taking into account the day's catch and other reservations. We can flexibly respond to specific requests, such as removing a particular fish from the Assorted Sashimi Platter or replacing it with an alternative. We value working together with you to find the best solution that respects your wishes.

Combining Minami-Kusatsu Warayaki and Assorted Sashimi Platter with Allergen Accommodations

Our restaurant is also proud to offer Minami-Kusatsu Warayaki (straw-grilled dishes). The straw-grilled bonito, with its fragrant smoky aroma, is extremely popular, rivaling our Assorted Sashimi Platter. The deliciousness of the bonito, savory on the outside and juicy on the inside, is a masterpiece that impresses many food connoisseurs. When combining these dishes prepared with different methods, we take the utmost care with allergy accommodations so that all customers can enjoy them safely.

Allergen Information for Warayaki Menu and Consideration for Seasonings

We clearly present allergen information for the ingredients used in our warayaki (mainly bonito) and the seasonings. In particular, the ponzu sauce and condiments (green onions, garlic, Japanese ginger, etc.) used with warayaki may contain soy sauce (wheat, soy), citrus fruits, and other allergens. When a customer informs us of an allergy, we explain the details of the seasonings used and offer alternatives if necessary, such as providing it with just salt and lemon for someone with a soy allergy.

Use of Separate Utensils and Thorough Hygiene Management

When cooking ingredients with different allergens, we strictly adhere to using separate cooking utensils (cutting boards, knives, tongs, etc.) and thoroughly cleaning and disinfecting them after use to reduce the risk of cross-contamination. Especially when we have customers with allergies to crustaceans or specific types of seafood, we implement an even stricter management system, such as using dedicated equipment or physically separating cooking areas. We spare no effort to ensure our customers can safely enjoy both the Assorted Sashimi Platter and our warayaki. Regarding ingredient storage, we also take measures to prevent cross-contamination by managing them separately according to allergens.

As a Smoking-Permitted Izakaya in Minami-Kusatsu: Considerations for a Comfortable Space

Allergen accommodation extends beyond the food itself. As a smoking-permitted izakaya in Minami-Kusatsu, we believe it's important to consider the entire environment to ensure all our guests have a comfortable stay. We do our best to accommodate guests who have allergies to or a dislike of tobacco smoke, striving to provide a pleasant atmosphere for everyone.

Consideration for Smoking/Non-Smoking Areas and Seating Arrangements

Although we are a smoking-permitted izakaya, we respect the comfort of each individual guest to the fullest. If you state your preference for smoking or non-smoking when you book, we will do our best to arrange seating that meets your request. For example, we can flexibly respond by seating you in a well-ventilated area. For large groups, such as a private party for 45 in Minami-Kusatsu, we may be able to adjust the use of floors or private rooms to more clearly define smoking and non-smoking areas. Please consult with us in advance, and we will propose the best arrangement.

Thorough Cleaning, Ventilation, and Creating a Clean Environment

We thoroughly clean and ventilate our premises not only during business hours but also after closing to maintain a clean and comfortable space. We are particularly careful to keep surfaces that customers touch directly, such as tables, chairs, and the walls of private rooms, clean to prevent the adhesion of allergens or other contaminants. By using a powerful ventilation system, we frequently circulate the air inside to prevent odors from lingering. Through these efforts, we provide the best possible environment for not only customers with allergies but for all guests to relax comfortably.

Through our delicious Assorted Sashimi Platter, warm service, and comfortable space, we hope to provide an unforgettable experience for our customers. As an izakaya in Minami-Kusatsu, we will continue to strive to deliver the best experience not only through our food but through the entire atmosphere.

To help you safely enjoy our Assorted Sashimi Platter and other dishes without worrying about allergies, there are a few things we ask for your cooperation on. By following these simple steps, we can promise you a safer and more comfortable dining experience. If you have any questions, please feel free to ask at any time. We will provide the best proposals tailored to each customer's situation.

  1. Inform us of any allergies and their details when booking or before your visit:
    • When booking by phone, please mention if anyone in your party has a food allergy, the specific allergens (e.g., shrimp, crab, mackerel, wheat), and the severity of symptoms (e.g., reacts to trace amounts, must avoid contact, etc., in as much detail as possible).
    • If using our online booking system, please be sure to include this information in the requests section. Providing detailed information allows our staff to check ingredients and adjust cooking plans before your arrival, ensuring a smooth response.
    • For large parties, such as for business entertainment or a private party for 45 in Minami-Kusatsu, if the organizer can gather and provide allergy information from all participants in advance, it will help the meal proceed more smoothly and safely. We kindly ask for your cooperation so that everyone can enjoy their time without worry.
  2. Please mention your allergies to our staff again upon arrival:
    • After entering, please inform the staff seating you or taking your order about your allergies once more. Even if you provided the information when booking, we may ask again for final confirmation.
    • We will provide a final confirmation regarding potential allergens in that day's specific Assorted Sashimi Platter items and preparation methods. Based on your declaration, we will offer the best way to serve the platter and make optimal suggestions for other dishes.
    • This reconfirmation helps prevent any misunderstandings and allows us to ensure you can enjoy our cuisine with complete peace of mind.
  3. Do not hesitate to ask if you have any questions or concerns:
    • When looking at the menu, if you wonder, Are the ingredients in this dish okay for me? or Does this seasoning contain any allergens?, please feel free to ask a nearby staff member, no matter how small the question.
    • Our staff shares knowledge about allergies and strives to answer customer questions specifically and courteously. It is our wish to resolve each of your concerns so you can be completely satisfied.
    • As an izakaya in Minami-Kusatsu, we are always prepared and value listening to our customers to deliver not just 'delicious' but also 'safe' dining experiences.
  4. Meticulous care during cooking and provision of alternatives:
    • Based on your allergy information, we will adjust the menu content as much as possible. For example, we can remove a specific seafood item from the Assorted Sashimi Platter, replace it with a different allergy-free one, or propose a separate, individually prepared allergy-friendly dish.
    • Similarly, for our Minami-Kusatsu Warayaki menu, we will respond flexibly by using alternative cooking methods or changing seasonings to avoid allergens. For instance, we strive to offer a wide range of choices, such as suggesting an egg-free dessert for customers with an egg allergy.
    • We will make every effort to ensure that customers with allergies and those without can gather around the table and share the joy of food together.

By following these steps, you can savor not only our Assorted Sashimi Platter but all the dishes we offer with complete peace of mind. As a smoking-permitted izakaya in Minami-Kusatsu, our entire staff is dedicated to providing not only delicious food but also the best possible dining experience for our customers.
