Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

This time, we will share tips on how to make your business entertainment even more appealing through the lens of wine pairing.

In the business world, client entertainment is more than just a meal. It's a vital opportunity for communication to show respect to your counterparts and build strong relationships. To foster engaging conversation and connect on a deeper level, everything from the food and drinks to the atmosphere must be in harmony. While some may associate 'Minakusatsu Izakaya' with a casual image, our establishment offers a refined experience that overturns that perception. We continually strive to create a special occasion that makes guests feel, 'I want to come back again.'

Many undoubtedly wonder, when planning client entertainment, 'What dishes should I choose?' or 'What drinks are best?' Especially in the context of 'Minakusatsu business entertainment,' you'll likely want to offer both local charm and sophistication. This is where we propose 'wine pairing.' Selecting wines that maximize the deliciousness of the food and spark lively conversation is a powerful tool for successful business entertainment. We hope this column helps you deeply understand the appeal of our wine pairing and the value it can bring to your client events.

Wine Pairing – The New Standard for Successful Business Entertainment in Minakusatsu

For successful business entertainment, the deliciousness of the food is paramount, but the choice of beverages that complement it is equally crucial. Especially in recent years, even in 'Minakusatsu business entertainment' settings, an increasing number of people are opting for wine pairing tailored to the dishes, rather than simply choosing beer or sake. Wine pairing is a magical combination where food and wine enhance each other's flavors and aromas, creating new discoveries and impressions with every bite. By incorporating this 'new standard' into your business entertainment, you can provide a higher-level experience and leave a profound impression on your guests.

  • Creating感動 (Kandō - Deep Emotion) Through Synergistic Flavors

The greatest charm of wine pairing lies in how food and wine amplify each other's flavors, drawing out deeper tastes. For instance, a crisp white wine with refreshing acidity and minerality pairs surprisingly well with fatty sashimi from 'Minakusatsu Seafood.' The wine brings out the umami of the seafood and leaves a clean aftertaste, making the next bite even more enjoyable. This synergy will give your guests a sense of 'This combination is exquisite,' naturally sparking conversation.

  • A Catalyst for Conversation and Atmosphere

Wine pairing is not only delicious but also an excellent conversation starter. Specific topics like, This wine truly complements this dish! or What grape varietal is this? naturally arise, helping to bridge the gap with your guests. Our staff carefully explains the story behind each wine and the intricacies of its pairing with the dishes, allowing guests to savor the dining experience more deeply and fully enjoy the atmosphere. This is a crucial element for promoting smooth communication in a 'Minakusatsu business entertainment' setting.

  • Offering Sophistication Beyond the Concept of a Minakusatsu Izakaya

Within the 'Minakusatsu Izakaya' category, our restaurant particularly prides itself on the high quality of its food and wine. By offering a highly specialized wine selection and delicate dishes tailored to them, which are rarely found in typical izakayas, we give guests the special impression that This is no ordinary izakaya. When your clients feel, They really know this place, or They chose a thoughtful restaurant, your own reputation will naturally rise. Wine pairing truly symbolizes this sophistication in our service.

The Exquisite Harmony of Food and Wine: Our Pairing Philosophy

At our restaurant, we view the encounter between food and wine as a unique, once-in-a-lifetime experience, and we cherish a pairing philosophy aimed at providing guests with the finest harmony. We meticulously select the optimal wine for each dish, especially those featuring seasonal ingredients centered around 'Minakusatsu Seafood,' utilizing the bounty of Lake Biwa, the rich produce of Omi, and fresh fish directly from Kochi. We propose memorable flavors that evoke new discoveries and impressions with every bite.

The Marriage of Seasonal Seafood and White Wine Reflecting the Seasons

Japan's four seasons bestow a rich array of expressions upon its seafood. We carefully select the best 'Minakusatsu Seafood' for each season, striving for white wine pairings that maximize the delicate flavors of each fish and shellfish. For example, for spring's sea bream carpaccio, we recommend a Sauvignon Blanc with a refreshing citrus aroma and sharp acidity. The sweetness of the seafood and the freshness of the wine harmonize beautifully in the mouth, further stimulating the appetite. For fatty pike conger blanched in hot water, a summer delicacy, pairing with a mineral-rich, full-bodied Chablis or Riesling deepens the umami of the conger and allows for a long, enjoyable finish.

  • Examples of Our White Wine Pairings
    1. Assortment of Fresh White Fish Sashimi: A finely effervescent and refreshing sparkling wine (e.g., Crémant de Bourgogne) highlights the inherent sweetness and delicate texture of the seafood.
    2. Seasonal Horse Mackerel Tataki: A light, fruity dry rosé wine (e.g., a Provence rosé) gently envelops the flavors of the horse mackerel and the aroma of its garnishes.
    3. Special Seafood Ajillo: Aromatic Viognier or barrel-aged Chardonnay, robust enough to stand up to the savory olive oil and garlic, deepens the richness of the dish.

The Depth of Red Wine Enhancing Japanese Delicacy

Going beyond the typical 'Minakusatsu Izakaya' framework, we also focus on pairing Japanese cuisine with red wine. While it might seem challenging at first glance, the depth of Japanese cuisine and the diversity of red wines mutually bring out new attractions. For example, Pinot Noir or Gamay, with their subdued tannins and rich fruitiness, pair surprisingly well with soy sauce-based simmered dishes or those with a slightly sweet and savory seasoning. Not just for meat dishes, but for richly flavored Japanese-inspired dishes like teriyaki tuna or roasted duck, a medium-bodied Merlot or a Japanese Koshu red wine with soft tannins is ideal.

  • Examples of Our Red Wine Pairings
    1. Seared Omi Beef: A Cabernet Sauvignon, with its rich aroma and robust tannins, enhances the deep umami and sweet fat of Omi beef, creating a superb harmony in the mouth.
    2. Duck Jibuni Style: A light, elegant Pinot Noir with bright acidity and berry fruitiness gently embraces the delicate flavor of duck and the taste of Japanese dashi broth.
    3. Seafood Hoba-yaki: For the savory aroma of magnolia leaves and the richness of miso, a Syrah or Zinfandel, spicy yet with smooth tannins, surprisingly makes an excellent match.
