Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

05

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Our establishment is a smoking-friendly izakaya in Minami-Kusatsu that provides a comfortable environment for those who wish to enjoy a smoke with their meal, in addition to delicious cuisine.

In this article, we will specifically introduce how our seasonal menu can brighten your table and deliver a special experience. As a Minami-Kusatsu izakaya beloved by the local community, we hope to add a touch of color to your daily life.

The Changing Seasons and the Dilemma of Choosing an Izakaya

I want to enjoy the seasonal flavors that change throughout the year, but I don't know which restaurant to choose.

I want to have a lively time with friends, but it's hard to find a place where we can smoke.

I'm planning a large party, but I can't find a restaurant that can be booked for private use.

Many people face these challenges. It's only natural to want a highly satisfying experience, especially when dining out amidst a busy life.

  • You want to pursue the unique deliciousness of the season, not just a standard menu.
  • You cherish the time to relax with a smoke after a meal.
  • You're looking for a place to enjoy company welcome/farewell parties or gatherings with friends without any worries.

Recently, smoking regulations have become stricter, limiting the options for smokers when choosing an izakaya. Furthermore, finding a space where everyone can be comfortable during a large gathering can be quite a task. While there are many restaurants that offer dishes featuring seasonal ingredients, few can satisfy all these needs and provide a truly relaxing atmosphere. At our restaurant, we have prepared meticulous services and an environment to meet the needs of such customers.

In addition to the quality of the food, the restaurant's ambiance and staff service are crucial factors in choosing an izakaya. Some prefer to enjoy their meal slowly in a calm space, while others want to spend their time in a lively, vibrant setting. At our Noji izakaya, we strive to provide a pleasant time for all by offering various types of seating to meet each customer's needs.

The Minami-Kusatsu Izakaya Experience: Enjoying Seasonal Bounties and a Smoke

To solve all your dilemmas, we welcome you as a smoking-friendly izakaya in Minami-Kusatsu that combines a seasonally-focused menu with a comfortable smoking environment. We offer creatively prepared dishes that allow you to taste the changing of Japan's four seasons, making the most of seasonal ingredients.

To enrich your dining experience, we also have a wide selection of alcoholic beverages. You can choose from sake and shochu, as well as wine and cocktails, to suit your preference. We are proud that this is one of the reasons why we are so loved by the local community as a Minami-Kusatsu izakaya.

A Menu that Reflects the Changing Seasons

We serve dishes daily that make the most of the rich ingredients brought by Japan's four seasons. Spring brings mountain vegetables and bamboo shoots; summer offers fresh summer vegetables and seasonal seafood; autumn features mushrooms and returning bonito; and winter presents crab and yellowtail. Our experienced chefs carefully select the most delicious seasonal ingredients and prepare them with great care. Our menu is like a seasonal picture scroll. We promise new discoveries and delights every time you visit.

  • A Dish to Announce Spring's Arrival: Our clay-pot rice, made with delicate pink cherry blossom sea bream, has a gentle sakura aroma that evokes the joy of spring. Additionally, the tempura of spring vegetables like aralia sprouts and butterbur shoots, with their characteristic pleasant bitterness, captures the season's flavor in a light batter.
  • A Masterpiece of Summer's Bounty: Lightly boiled pike conger pairs perfectly with a plum sauce for a refreshing taste. Salt-grilled sweetfish, caught fresh in Lake Biwa, is a summer tradition with its fragrant aroma and flavorful meat. Our chilled seasonal vegetable dishes are visually cooling and whet the appetite with their crisp taste.
  • Dishes Celebrating Autumn's Harvest: The straw-grilled returning bonito, rich in fat, fills your mouth with the fragrant aroma of straw and the deep umami of the fish. Matsutake mushroom steamed in an earthenware teapot will warm your soul with its rich fragrance and profound broth. Our salt-grilled Pacific saury is a simple yet exquisite dish that maximizes the ingredient's natural flavor.
  • A Hot Pot to Savor Winter's Delights: Fugu (pufferfish) hot pot with its firm meat or crab hot pot with its condensed sweetness will warm you from the core on a cold winter day. Buri-shabu (yellowtail shabu-shabu), featuring fatty yellowtail, is another special taste that can only be enjoyed in winter.

These seasonal menus are prepared using the finest ingredients, hand-picked by our chefs who visit the market themselves. Please experience the changing of the seasons through our menu.

The Aroma of the Four Seasons Woven by Straw-Grilling

One of our signature offerings is the Minami-Kusatsu Warayaki (straw-grilling). Using fresh bonito directly from Kochi Prefecture, as well as seasonal seafood and Omi beef, we grill them instantly over a roaring flame. This straw-grilling technique enhances the ingredients' umami with a fragrant, smoky aroma. This powerful aroma and flavor further highlight the appeal of ingredients that change with the seasons. Warayaki is a masterpiece that stimulates all five senses, and we are proud to offer it.

  • Straw-Grilled Bonito Tataki: Fresh bonito, sourced directly from Kochi Prefecture, is grilled to perfection, with a fragrant exterior and a moist interior. The authentic taste, enjoyed with our homemade ponzu sauce and condiments, is an unforgettable experience. The fat content varies with the season, offering a different character each time.
  • Straw-Grilled Omi Beef: We also offer Omi beef, a brand of beef that Shiga Prefecture is famous for, prepared in the warayaki style. Infused with the aroma of straw, the tender meat and rich umami melt in your mouth. Enjoy this luxurious dish with salt or our homemade sauce to your liking.
  • Straw-Grilled Seasonal Fresh Fish: We carefully select the most delicious fish of the season and serve it infused with the aroma of straw. For example, enjoy fatty returning bonito in the fall or winter yellowtail, allowing you to fully appreciate the unique umami of different seafood along with the fragrance of warayaki throughout the year.

Minami-Kusatsu Warayaki is not just a cooking method; it is our commitment to bringing out the inherent potential of ingredients and delivering a moving experience to our customers. From the moment the flames rise to the fragrant smoke, we offer an experience to be savored with all five senses.

Savoring Seasonal Seafood to the Fullest

We are also confident in our Minami-Kusatsu seafood dishes. We procure fresh seafood daily from carefully selected sources all over Japan and serve it as sashimi, grilled dishes, or simmered dishes, using cooking methods that bring out the best of the ingredients. The seasonal seafood, which changes throughout the year, offers unique fat content and textures that can only be enjoyed at that time.

Although Shiga Prefecture is not on the coast, we have established our own supply routes to source the freshest fish of the day directly from fishing ports across the country. This allows us to always offer our customers Minami-Kusatsu seafood dishes in their best condition.

  1. Assorted Sashimi Platter: A luxurious platter of the freshest fish of the day. The selection, including tuna, sea bream, salmon, and yellowtail, changes with the season and is as beautiful as it is delicious. Enjoy the unique umami and texture of each fish.
  2. Simmered or Salt-Grilled Seasonal Fish: Our gently flavored simmered fish, which highlights the ingredient's natural taste, and our salt-grilled fish, which simply enhances the umami with salt, are also popular. The simmered dishes are often accompanied by seasonal root vegetables, adding to the seasonal feel.
  3. Seafood Bowls and Nigiri Sushi: Perfect for a finishing dish, we offer seafood bowls generously topped with fresh fish and nigiri sushi, each piece carefully crafted by our chefs. They pair wonderfully with rice and are ideal for concluding a meal after drinks.
  4. Fisherman's Style Bouillabaisse: This bouillabaisse, made with a lavish amount of fresh seafood, features a soup rich with concentrated seafood umami. Enjoy it to the last drop by dipping bread in it.

The pairing of fresh seafood dishes with seasonal alcoholic beverages is another major attraction of our restaurant. Our staff will be happy to recommend sake or white wine that complements each dish. Please come and try the signature seafood dishes of our Noji izakaya.
