Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Minami-Kusatsu.

05

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Addressing the Concerns of Guests with Allergies: Dining Out is Worrying

In recent years, the number of people with food allergies or dietary restrictions has been increasing. While dining out has become more common, we often hear concerns like, I have to be careful when choosing from the menu, It's hard to communicate my allergies, and I'm anxious about whether the food is truly safe for me. Especially at places like an izakaya in Minami-Kusatsu that offer a diverse menu, finding a restaurant where you can dine with peace of mind can be challenging.

A special gathering at Minami-Kusatsu Station or a banquet in Minami-Kusatsu can be less memorable if you're constantly worried about allergies. At 'Minami-Kusatsu Warayaki,' we strongly believe in creating a place where everyone can share delicious food and enjoyable moments without anxiety. Handling allergies is not simply about removing an ingredient. It requires meticulous care and ingenuity to sincerely address each customer's individual needs and provide a dish that is as safe and delicious as possible.

What are the specific concerns?

  • Risk of Accidental Ingestion: Worry about unintentional cross-contamination with allergens.
  • Difficulty in Communication: The challenge of accurately conveying allergy information to staff.
  • Limited Menu Options: Frustration with having few enjoyable dishes to choose from due to limited allergy-friendly options.

To alleviate these concerns and ensure our guests feel, I'm glad I came to Minami-Kusatsu Warayaki, we have implemented specific measures.

Our Allergy-Friendly Practices at Minami-Kusatsu Warayaki for Your Peace of Mind

To help our guests enjoy our cuisine to the fullest, 'Minami-Kusatsu Warayaki' has established a three-pillar approach to handling allergies. Everything we do is for our customers' enjoyment and peace of mind.

1. We Welcome Advance Consultations: The First Step to a Safe Experience

The most effective way for you to dine with confidence is to share your allergy information with us before your visit. Please feel free to inform our staff when making a reservation or upon arrival.

  • Informing Us at Reservation: When booking by phone or online, please use the comments section to provide details about the type of allergy (e.g., wheat, egg, milk, buckwheat, peanuts, shrimp, crab, etc.) and specific ingredients to avoid. This gives our kitchen staff time to prepare and plan accordingly.
  • Confirmation Upon Arrival: If you were unable to inform us when booking or are a walk-in guest, our staff will confirm any allergies when seating you. Providing detailed information at this time is greatly appreciated.
  • Staff Training: All our staff receive regular training on basic allergy awareness and the importance of listening carefully to our customers. We strive to create a welcoming atmosphere where you can feel comfortable sharing your dietary needs.

2. Flexible Menu Adjustments: Thoughtful, Individualized Service

Based on the allergy information you provide, our skilled chefs will do their utmost to adjust menu items and create a safe and delicious dish for you.

  • Ingredient Checks and Alternatives: In our kitchen, we thoroughly check the allergen information for all ingredients used. For example, if you are allergic to a specific type of seafood in the Assorted Sashimi Platter, we can substitute it with another fresh fish or remove it from the platter. If a sauce for the Omi beef contains dairy or wheat, we will consider preparing an alternative, allergy-friendly sauce. We strive to be as flexible as possible.
  • Consideration for Cookware and Methods: For guests with severe allergies, we take extra precautions, such as thoroughly washing cooking utensils or using separate cooking spaces and tools to prevent cross-contamination. For our straw-roasted bonito from Kochi, if there is a risk of allergens spreading through the smoke, we may suggest an alternative cooking method.
  • Proposing Special Menu Items: Even if certain ingredients must be completely avoided, we can suggest allergen-free items from our existing menu or even create a special dish so you can still enjoy your meal. We can devise simple cooking methods that highlight the freshness of our Minami-Kusatsu seafood and bring out the best in the ingredients.

3. Raising Awareness Among All Staff: A Team Approach to Allergy Safety

Handling allergies is not the responsibility of a single staff member. We ensure a comprehensive system by sharing customer information and coordinating between the kitchen and front-of-house teams.

  • Thorough Information Sharing: Allergy information provided by a guest is promptly shared with the head chef, the kitchen staff in charge, and all front-of-house staff. We clearly mark allergy notes on order tickets and perform multiple checks during preparation.
  • Final Confirmation: Before a dish is brought to your table, the serving staff will double-check its contents to ensure it has been prepared correctly according to your allergy requirements. When serving, we will also inform you that the dish is allergy-friendly, giving you a final chance to confirm.
  • Emergency Procedures: In preparation for any unforeseen circumstances, all staff members are equipped with basic knowledge of allergic reactions and are trained on emergency procedures. We continuously foster a high level of awareness to prioritize customer safety.

Practical Steps for a Worry-Free Experience at Minami-Kusatsu Warayaki

For guests with allergies, please follow these steps before your visit to ensure a safe and enjoyable dining experience at 'Minami-Kusatsu Warayaki'.

  1. Share Information When Booking: For the Smoothest Service
When booking by phone or online, please be sure to mention your allergies and specify the ingredients. For example, I have an egg and dairy allergy. I especially need to avoid sauces made with milk. This level of detail is extremely helpful for us. Advance information is particularly crucial when planning a large banquet in Minami-Kusatsu, such as a private party for up to 45 people in Minami-Kusatsu.
  2. Reconfirm Upon Arrival: To Ensure Peace of Mind
After being seated, please reconfirm your allergies with your server. This ensures a final check can be made with the kitchen. Saying something like, I mentioned my [allergen] allergy when I booked, could you please double-check? helps ensure everything is correct.
  3. Don't Hesitate to Ask Questions: We're Here to Listen
If you have any questions about menu items or the seasonings used, please don't hesitate to ask our staff, no matter how small the detail. Our team is here to answer your questions thoroughly and help you choose your meal with confidence. For instance, if you ask, Does the seasoning for the straw-roasted bonito from Kochi contain wheat? we will check with the kitchen and provide a prompt answer.

Through these steps, we hope to work together with you to create a safer and more enjoyable dining experience.
