Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Sublime Pairings: Straw-Grilled Cuisine and Wine in Minami-Kusatsu

The Mariage of Warayaki and Wine in Minami-Kusatsu: Opening the Door to a New Sensation

In Minami-Kusatsu, warayaki is a traditional method where fragrant flames bring out the maximum umami of the ingredients. Its powerful aroma and deep flavor stimulate the Japanese appetite and promise a memorable experience. However, if you wish to elevate the allure of warayaki and seek a truly special culinary journey, we urge you to try pairing it with wine. While many believe sake or shochu are the standard companions for warayaki, the truth is that wine and warayaki are a surprisingly perfect match, creating a magnificent mariage that enhances each other's unique qualities. Allow us to introduce some tips for deeply savoring the essence of Minami-Kusatsu warayaki with wine, adding a touch of elegance to your evening.

Warayaki and Wine: A Journey to Explore Untouched Flavors

The pairing of Japanese cuisine and wine has garnered significant attention in recent years. In particular, the powerful yet delicate flavors of warayaki dishes, when met with the diverse character of wine, can lead to new discoveries that overturn conventional wisdom. The Minami-Kusatsu warayaki we offer is prepared with great care for the natural taste of the ingredients, with our skilled chefs meticulously tending to each dish over the flames. It is precisely because of this dedication that adding the depth of wine creates a new sensation with every bite. We invite you to enjoy not just a meal, but a full sensory culinary experience at our establishment.

Warayaki Dishes and Wine Pairings: New Discoveries Await

When enjoying warayaki in Minami-Kusatsu, you might wonder which wine to choose. Rest assured, the rich flavors of straw-grilled cuisine create a wonderful harmony with a variety of wines. Here, we will introduce recommended wines with specific dish examples.

  • The Encounter of Straw-Grilled Bonito Tataki and Red Wine

Straw-grilled bonito tataki is characterized by its fragrant surface and the moist, rich umami of the fish inside. A red wine that is neither too light nor too heavy is the perfect companion for this robust flavor. For example, a fruity red wine with mild tannins, like a Pinot Noir, will complement the bonito's umami without overpowering it. The aroma of the straw melds with the wine's complex bouquet, creating an exceptional and lingering finish. A slightly spicy Syrah can also add depth to the warayaki's flavor, creating a more mature taste profile.

  • Straw-Grilled Pork or Chicken with White and Rosé Wines

Warayaki's magic isn't limited to bonito; it works wonders on pork and chicken as well. Straw-grilled pork, with its sweet fat and smoky aroma, becomes an incredibly juicy dish. It pairs beautifully with a full-bodied, barrel-aged white wine like Chardonnay, or a fragrant rosé. Straw-grilled chicken has a more delicate flavor, making a white wine with refreshing acidity, such as Sauvignon Blanc, an excellent choice to tighten the meat's umami and provide a clean aftertaste.

  • Straw-Grilled Vegetables with Sparkling Wine

It may come as a surprise, but seasonal vegetables prepared with the warayaki method are also a fantastic match for wine. In particular, a light sparkling wine is recommended for the enhanced sweetness of straw-grilled onions or the smoky flavor of grilled eggplant. The crisp bubbles highlight the vegetables' natural sweetness and refresh the palate. It's an exciting pairing that can be enjoyed as a starter or a palate cleanser between courses.

The Charm of a Minami-Kusatsu Izakaya! Seafood and Wine Beyond Warayaki

In addition to our Minami-Kusatsu warayaki, our restaurant offers a wide variety of fresh, seasonal Minami-Kusatsu seafood dishes. The pairings of these seafood dishes with wine are also full of discovery and delight.

Techniques for Matching Fresh Seafood with Wine

  • Assorted Sashimi with Sake, and also White Wine

A fresh sashimi platter is like a treasure chest from the sea. While the best wine varies depending on the type of fish, a dry white wine is generally a superb match. For instance, a wine with strong minerality like Chablis pairs well with delicate white fish, while a slightly richer Sauvignon Blanc or even a light Pinot Noir can surprisingly complement fatty tuna or salmon. We can suggest the perfect wine to match your sashimi selection, so please feel free to ask our staff.

  • Grilled or Simmered Fish with Wine

Simple salt-grilled fish or richly flavored simmered dishes also reveal new dimensions when paired with wine. A rosé or a light-bodied red wine can be an unexpected but delightful match for fatty grilled fish. For the sweet and savory flavors of simmered fish, a fruity dry white wine or a lightly sparkling wine will cleanse the palate and stimulate your appetite.

  • Fried Dishes (like Tempura) with Sparkling Wine

Crisp, battered fried foods like tempura find their ultimate partner in a well-chilled sparkling wine. The bubbles wash away the oiliness from your palate, making the next bite even more delicious. The combination of shrimp or seasonal vegetable tempura with sparkling wine is sure to add a touch of glamour to any Minami-Kusatsu banquet and spark lively conversation.

How to Incorporate Wine into Gatherings at Minami-Kusatsu Station and Banquets in Minami-Kusatsu

When you use our restaurant for a gathering at Minami-Kusatsu Station or a Minami-Kusatsu banquet, incorporating wine can create a memorable and sophisticated experience. Wine is versatile and can cater to various tastes, even when preferences among guests differ.

  • Start with a Sparkling Wine for an Elegant Toast

Sparkling wine is perfect for kicking off a banquet. The clinking of glasses sets a festive mood and brightens the atmosphere instantly. It also stimulates the appetite, building anticipation for the courses to come.

  • Alternate Between White and Red to Match the Dishes

For a Minami-Kusatsu banquet that features our signature Minami-Kusatsu warayaki alongside other seafood dishes like sashimi and tempura, we recommend having both white and red wine on the table. This allows guests to choose freely according to their preference and the dish in front of them, enriching the dining experience.

  • Consider Non-Alcoholic Wine as an Option

If some guests don't drink alcohol or are driving, non-alcoholic wine is an excellent alternative. With a sophisticated taste and appearance, it allows everyone to share in the toast, enhancing the sense of unity at the party.
