Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

Service

01

Robata & Warayaki

04

Omi Beef & Omi Chicken

Shiga's specialty Omi beef, straw-grilled or miso-marinated, and overnight-dried Omi chicken. Enjoy Shiga's premium ingredients dynamically over charcoal in Minami-Kusatsu.

05

Banquet courses with free-flow drinks, and full-venue bookings for 35–45 guests. Steps from Minami-Kusatsu Station — ideal for company parties and gatherings.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Allergy Accommodations: The Commitment of Minami-Kusatsu Warayaki

Introduction: Where Safety and Deliciousness Come Together at Minami-Kusatsu Warayaki

Here in Minami-Kusatsu, Shiga, Minami-Kusatsu Warayaki welcomes you with the fragrant aroma of straw. As a premier Minami-Kusatsu izakaya, we offer a unique specialty you can't find anywhere else: fresh bonito sourced directly from Kochi, lavishly grilled over a straw fire. We invite you to fully savor the charm of Shiga and the bounty of Japan's seas, with offerings like seasonal Minami-Kusatsu seafood and locally prized Omi beef.

We can accommodate a variety of occasions, from drinking parties near Minami-Kusatsu Station and important business dinners in Minami-Kusatsu to large-scale Minami-Kusatsu banquets and private bookings for up to 45 guests. Above all else, our most cherished value is ensuring that each and every guest can enjoy their meal to the fullest. To realize this wish, we not only pursue culinary excellence but also strive daily to create an environment where you can dine with peace of mind.

We deeply understand that for guests with food allergies, dining out can sometimes be a source of anxiety. It would be a great disappointment to us if a wonderful time were to be spoiled by concerns about allergies. That is why today, we would like to share in detail the initiatives Minami-Kusatsu Warayaki is taking to accommodate allergies for the sake of our customers' smiles.

Turning Worries into Wonderful Experiences: Our Sincere Commitment to Allergy Accommodations

Does this dish contain any allergens? Is there an alternative menu? — Many of our guests have likely had these questions and concerns when dining out. In an izakaya setting, where a wide variety of ingredients are used, concerns about cross-contamination and limited menu choices can be even greater.

At Minami-Kusatsu Warayaki, we aim to resolve these anxieties and provide a service that makes our guests feel, I'm so glad I ate here. We don't just remove allergens; we take a multi-faceted approach to ensure our guests can spend their dining time in comfort and joy. We are constantly pursuing a culinary experience that is not only delicious but also kind to our customers' bodies and minds.

Accommodating allergies requires meticulous care for our guests. Our fundamental policy is to prioritize communication, listen carefully to your needs, and explore every possible way to meet them. Allow us to introduce the concrete steps we are taking to ensure you can enjoy your meal with peace of mind.

Our Specific Allergy Measures for Guests at Minami-Kusatsu Warayaki

1. From Reservation to Arrival: Detailed Consultation and Information Sharing

To ensure our guests can dine at Minami-Kusatsu Warayaki with confidence, we have a system in place to carefully gather information about your allergies from the moment you make a reservation. If you inform us of any food allergies when booking, we can share this information with our kitchen staff before your visit, allowing us time to prepare accordingly.

  • Encouraging Advance Notification: When you book, please declare any specific allergies (Japan's 7 specified raw materials: egg, milk, wheat, buckwheat, peanut, shrimp, crab, and the 21 associated items) as specifically as possible. If you have multiple or severe allergies, we would appreciate it if you could provide detailed information.
  • Detailed Confirmation: Upon your arrival, we will re-confirm your allergies. By understanding the type, severity, and potential symptoms, we can provide more appropriate and safer menu suggestions and preparation.
  • Accurate Communication to the Kitchen: The information we gather is recorded on a dedicated sheet for each customer and accurately relayed to the head chef and the cook in charge. We have a double and triple-check system in place to prevent misunderstandings or miscommunication.

We believe this thorough communication at the initial stage is the first step toward a safe and enjoyable dining experience. As a local Noji izakaya, we cherish this attentive approach for our community's patrons.

2. Strict Management in the Kitchen: Pursuing Both Deliciousness and Safety

The allergy information received from our guests is strictly managed in the kitchen, and the utmost care is taken throughout every step of the cooking process. Although our kitchen space is limited, we take measures to prevent cross-contamination as much as possible and provide thorough training to our staff.

  • Separate Use and Cleaning of Utensils: We strive to use separate cutting boards, knives, bowls, and other utensils for ingredients that contain allergens and those that do not. After use, they are thoroughly cleaned and inspected for cleanliness before the next use.
  • Separation of Cooking Areas and Workflow Considerations: Whenever possible, we prepare allergy-friendly meals in a dedicated area or at a different time from other cooking. We exercise extreme caution when handling airborne allergens like wheat flour and eggs.
  • Glove Use and Hygiene Management: When preparing allergy-friendly dishes, our chefs wear new gloves to prevent secondary contamination from their hands. All our chefs share knowledge about allergies and maintain rigorous daily hygiene standards.

For example, our signature dish, Straw-Grilled Bonito from Kochi, uses few specific ingredients in its unique straw-smoking process. However, we check the seasonings used afterward for allergens and can offer a simple salt-only version upon request. For our Assorted Sashimi, we also pay close attention to the soy sauce and condiments and can make adjustments where possible.

3. Menu and Cooking Customizations: Flexible Proposals to Meet Diverse Needs

We actively work to propose alternative dishes from our existing menu or create special meals tailored to the type and severity of our guests' allergies. While we cannot fulfill every single request, we approach each one with flexibility and creativity to meet your expectations.

  • Proposing Allergen-Free Menus: We can suggest dishes that do not contain or minimize specific allergens. For instance, our straw-grilled bonito from Kochi can be enjoyed by many guests with confidence when served with simple salt and condiments. Vegetable-centric dishes, sashimi platters avoiding specific seafood, and Omi beef steak may also be accommodated by adjusting the cooking method.
  • Modifying Cooking Methods: We make efforts to expand your menu options by adjusting cooking methods, such as grilling instead of frying or omitting certain seasonings. For dishes featuring Omi beef, we can check the ingredients in sauces and suggest alternatives.
  • Checking Ingredient Labels: We carefully check the labels of processed foods and seasonings for allergens to provide accurate information to our guests.

It is our pleasure to support each guest's desire to eat something delicious by expanding their dining choices.

4. The Unique, Meticulous Hospitality of Minami-Kusatsu Warayaki

Beyond allergy accommodations, we never forget the small details that make our guests' stay comfortable. As a smoking-allowed izakaya in Minami-Kusatsu, we are mindful of seating arrangements and ventilation to provide a pleasant space for both smokers and non-smokers.

  • Handling Group and Private Bookings: For large banquets of up to 45 people or business dinners in Minami-Kusatsu, we gather detailed allergy information in advance to provide individual dishes or menu adjustments, ensuring all attendees can dine safely. Through close consultation with the event organizer, we ensure there is no accidental exposure to allergens.
  • Raising Awareness Among All Staff: Not only our kitchen staff but also our floor staff possess basic knowledge of allergies and undergo regular training to answer guest questions accurately. We strive to create an atmosphere where guests feel comfortable asking anything.

We aim to provide the unique hospitality of Minami-Kusatsu Warayaki through our entire space and service, not just our food, to create the best possible memories for you.

A Request to Our Guests: Steps for a Safe and Enjoyable Meal

At Minami-Kusatsu Warayaki, we make every effort to ensure our guests can safely enjoy our delicious food. However, customer cooperation is essential for allergy accommodation. By following the steps below, we can share a safer and more enjoyable dining experience together.

  1. The Importance of Advance Notification When Booking: When making a reservation, please be sure to inform us of any food allergies and specify the allergens in detail. This is crucial for us to prepare in advance and consider the appropriate measures.
  2. Re-confirmation Upon Arrival: When you arrive, our staff will re-confirm your allergies. We appreciate your cooperation once more. If there have been any changes, please let us know at this time.
  3. Feel Free to Ask Questions: If you have any concerns or questions while looking at the menu, please do not hesitate to ask our staff, no matter how small the detail may seem. We are here to answer your questions carefully and help you make choices with confidence.
  4. Preparing for an Unlikely Event: For guests with severe allergies, we recommend bringing your own medication (such as an EpiPen) as a precaution. While we take the utmost care, we ask that you also consider your own preparations to protect yourself in an unlikely event.

Providing accurate information is the first step toward a safe dining experience. We thank you for your understanding and cooperation.
