Commitment

1

The size of the bonito

In spring, young 2-3kg first-catch bonito; in autumn, richly fatty 4-5kg returning bonito, carefully selected by season.

2

Raw bonito from Kochi

Most Kochi bonito is pole-and-line caught, leaving it beautiful and undamaged. We ship our select bonito direct from the port.

3

Straw from Shiga

We use straw hand-cut ourselves from vast contracted fields in Shiga. Dried straw burns hot with the finest smoky aroma.

4

The grilling

Over straw flames reaching 1000 degrees, we sear a crust about 5mm into the flesh, then finish with residual heat to lock in flavor.

5

The thickness of the cut

Cut over 1cm thick so the straw aroma fills your mouth, brimming with bonito flavor and a springy texture.

6

Our chosen salt

A fully sun-dried salt handmade by artisans from Kochi seawater. We select larger crystals for a mellow mineral taste.

How to enjoy Robata

Robata Story

01

Head for the counter where the straw burns

One to two minutes from the east exit of Minami-Kusatsu Station, at Liberty Minami-Kusatsu 2F. From the counter seats facing the straw grill you can watch the bonito wrapped in flame.

02

Start with the medium, one slice at a time

Straw-grilled bonito starts at 1,490 yen for the medium, about two portions. Take the first slice unseasoned and taste the smoke held in the surface.

03

With the large, change as you go

Work through the condiments, rock salt and citrus. The large, about four portions at 2,480 yen, gives you enough to keep shifting the flavor to the last piece.

04

Smoke, drink, and lose track of time

All 45 seats allow smoking, and guests under 20 cannot enter. We suggest Shiga sake, dry through sweet, to sit alongside the straw-grilled plates.

Bringing Home the Luxury of Omi Beef: Your Guide to Minami-Kusatsu Takeout

Thank you for your continued patronage. Here in Minami-Kusatsu, our mission is to provide everyone with the finest dining experience. While there's nothing quite like a freshly prepared meal at our restaurant, there is no greater joy for us than knowing you can enjoy our flavors in the comfort of your own home or during intimate moments with your loved ones.

Today, we would like to share some tips on how to make the most of our signature dishes, including our prized Omi beef, through takeout and delivery, to enrich your dining table at home. Whether it's for a birthday, an anniversary, a day you want to treat yourself, or if you're planning to 'entertain in Minami-Kusatsu' at home, you're sure to find this information helpful.

Making Omi Beef More Accessible: A Form of Luxury to Savor at Home

You might think that some flavors can only be experienced at a restaurant. However, our desire is to be a part of our customers' various life scenes and to provide the joy of food. Many of our customers seek authentic flavors for family gatherings or for entertaining guests at home.

I want to enjoy authentic cuisine at home, but how can I do so without compromising the restaurant's quality? Since it's special Omi beef, I want to taste it in its best condition.

Some of you may have these questions. Takeout and delivery are not just about bringing food home. With a little creativity, your dining table at home can be transformed into a special space, just like one of our private rooms. Here, we will introduce specific ways to achieve this.

The Joy of Recreating Our Restaurant's Flavor at Home

We offer our dishes without any compromise, from the selection of ingredients to the cooking methods and seasoning. In particular, our Omi beef, known for its rich flavor and melt-in-your-mouth texture, is prepared with great care to bring out its full charm. We will provide all the support we can to help you recreate this incredible experience at home.

  • As a special dish to upgrade your dinner on a busy day

  • As a main dish to celebrate a special family anniversary

  • As a way to entertain close friends at a home party

We hope that our dishes will enrich your dining table on various occasions.

Bringing the Flavors of Minami-Kusatsu to Your Home: Tips for Takeout & Delivery

From here, we'll introduce specific ways to enjoy our takeout and delivery dishes more deliciously and comfortably. Let's bring out the maximum appeal of our Omi beef and turn your home dining into something special.

Enjoy it at its Best! Tips for Omi Beef Takeout

When taking out our signature Omi beef dishes, there are a few key points to keep in mind. With a little care, you can experience the same deliciousness at home as you would in our restaurant.

  1. Adjust Your Pickup Time: To enjoy the freshly made taste, please specify a pickup time that matches when you plan to eat. It's best to enjoy hot dishes while they are hot, and cold dishes while they are cold.

  2. Care During Transport: When bringing your food home, please return as quickly as possible to minimize temperature changes. We recommend using an insulated bag, especially in summer or winter. Also, please be careful not to tilt or shake the food, as this can ruin the presentation or cause flavors to mix.

  3. Reheating Tips: Some dishes can be enjoyed even more by gently reheating them at home. For example, for dishes like Omi beef steak or roast beef, let them come to room temperature slightly before eating, then lightly warm them in a toaster oven or frying pan to enhance the umami of the meat. Be careful not to overheat, as this can make the meat tough. The trick is to warm it for a short time while keeping an eye on it.

If you have any questions, please feel free to ask. We are always here to help you have the best dining experience.

Using Delivery to Host 'Minami-Kusatsu-Style' Entertainment at Home

For 'entertaining in Minami-Kusatsu' where you invite important guests to your home, our delivery service can be a powerful ally. Save on preparation time while providing smart hospitality with our authentic cuisine.

  • Creative Menu Selection: We recommend featuring a signature Omi beef dish as the main course, and combining it with aromatic 'Minami-Kusatsu straw-fired' dishes or fresh 'Minami-Kusatsu seafood' sashimi to cater to various guest preferences. Choosing an assortment that is also visually appealing will make your table even more impressive.

  • Table Coordination: Instead of serving the food directly from the delivery containers, replating it beautifully on your own dishes adds a significant touch of elegance. Adding colorful vegetables or herbs, or using distinctive tableware, is also a great idea. You can create a calm, restaurant-like atmosphere using candles or indirect lighting.

  • Drink Pairings: Preparing drinks that pair well with the food will liven up the conversation. Our dishes go perfectly with not only sake but also wine. Researching your guests' preferences in advance will allow for even smarter hospitality.

What we deliver is not just food. It is our heartfelt assistance in creating your 'special moments'.

Expanding Your Culinary Experience with Takeout: The Charm of Straw-Fired Dishes and Seafood

In addition to Omi beef, our restaurant boasts many other signature dishes. You can fully enjoy the aromatic flavor of our 'Minami-Kusatsu straw-fired' dishes and the fresh bounty of our 'Minami-Kusatsu seafood' at home.

Recreating Straw-Fired Dishes at Home! The Secret to Maximizing the Aroma

Our 'Minami-Kusatsu straw-fired' dishes are characterized by being seared quickly over a high flame, resulting in a fragrant exterior and a moist interior. Here are some tips for enjoying this unique aroma to the fullest at home.

  • Locking in the Aroma: As soon as you get your straw-fired dish home, transfer it to an airtight container or wrap it tightly with plastic wrap to prevent the aroma from escaping. This will help lock in the fragrance until just before you eat.

  • Presentation at the Table: If you're reheating it, do so lightly in a frying pan to avoid burning, focusing on enjoying the aroma. Serving it with the provided condiments like garlic slices, green onions, and ginger will further enhance the flavor. When plating, place the distinct sear marks of the straw-firing facing up to visually appeal with its aromatic quality.

Please enjoy the experience of our straw-fired dishes, a delight for all five senses, in your own home.

Fresh Minami-Kusatsu Seafood at Home: How to Store and Serve it Deliciously

In Minami-Kusatsu, blessed by the bounty of Lake Biwa, we offer carefully selected fresh seafood with our 'Minami-Kusatsu Seafood' dishes. Here are some tips for maintaining their freshness and enjoying them deliciously, even with takeout or delivery.

  • Tips for Maintaining Freshness: Store any sashimi or seafood dishes you take home immediately in a low-temperature area of your refrigerator, like the chiller compartment. Ideally, they should be consumed the same day, but if you need to keep them until the next day, it's crucial to store them in an airtight container to prevent them from drying out.

  • Plating Ideas: When plating, be mindful of color. Garnishing with shiso leaves, cucumber, or lemon will create a beautiful and appetizing presentation. By arranging the provided wasabi, ginger, and green onion condiments creatively, you can create the atmosphere of a high-end Japanese restaurant.

  • Temperature Considerations: Cold dishes like sashimi are best enjoyed when kept chilled in the refrigerator until just before serving. Chilling the serving plates beforehand is another great touch.

Please savor the bounty of Minami-Kusatsu's seafood at your own dining table.

Perfect for Special Occasions! Host a 'Minami-Kusatsu 45-Person Private Party' at Home

While a large banquet like a 'Minami-Kusatsu 45-person private party' is usually held at a restaurant, our delivery service makes it possible to host a special gathering at a location of your choice, such as your home or a rental hall. We also offer an extensive 'Minami-Kusatsu Izakaya' menu to accommodate a wide variety of occasions.

Planning a Successful Large Party at Home

When planning a party for a large group, advance preparation is the key to success. Make the most of our delivery service to reduce the burden on the organizer.

  1. Consult with Us in Advance: Please consult with us beforehand with as much detail as possible, including the number of guests, your budget, your food preferences (e.g., you want Omi beef as the main, or to include straw-fired dishes and seafood), and any allergies. We will propose the optimal menu plan for you.

  2. Menu Diversity: With a large group, preferences will vary. We recommend creating a balanced menu by combining a main Omi beef dish with assorted appetizers, chicken or pork 'Minami-Kusatsu straw-fired' dishes, 'Minami-Kusatsu seafood' a la carte items, and finishing rice dishes from our 'Minami-Kusatsu Izakaya' menu.

  3. Confirm Pickup/Delivery Method: For large orders, confirming the delivery time and location is especially important. Let's arrange the details with our restaurant in advance to ensure a smooth handover. If necessary, you can also consult with us about delivering hot and cold dishes separately.

  4. Prepare Tableware and Cutlery: Plating the food on your own dishes instead of using the delivery containers conveys a greater sense of hospitality. Please prepare serving tongs for platters, individual plates, and chopsticks for the number of guests.

  5. Check for Allergies: If any of the attendees have allergies, please be sure to inform us in advance. We will accommodate them individually as much as possible.

With this kind of careful planning, both the organizer and all the guests can truly enjoy a large gathering.

Tips for Enjoying a 'Minami-Kusatsu Izakaya' Atmosphere at Home

You can create a warm and lively 'Minami-Kusatsu Izakaya' atmosphere even at home. Along with the delivered food, let's add a little creativity to the space itself.

  • Drink Lineup: Providing a diverse range of drinks like at a restaurant, including sake, shochu, beer, and soft drinks, will be appreciated as it offers more choices. You can also consult with us about drinks that pair well with our food.

  • BGM and Lighting: Playing pleasant background music or dimming the lights slightly with indirect lighting can create a relaxing space. While the lively atmosphere of an izakaya is great, savoring a meal in a calm space at home is a luxury in itself.

  • Use of Small Plates and Bowls: Serving dishes in individual small bowls creates an izakaya-like feel and is also hygienic. Using colorful small bowls will make the table look more festive.

The time spent gathering around delicious food with loved ones, without any fuss. This is the true pleasure of dining.
